Chewy Ginger Cookies

Delicious and super chewy ginger cookies for your healthy holiday baking! Can be made gluten free and dairy free.
Recipe makes 24 cookies.
- 2 + 1/4 cups all-purpose or 1:1 gf flour
- 1 + 1/2 tsp baking soda
- 2 tsp ground ginger
- 1 + 1/4 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup unsalted butter or alternative, room temp
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 1 egg, room temp
- 1/4 cup molasses
- 2 tsp pure vanilla extract
Mix all dry ingredients, except for coconut sugar, in a medium sized bowl.
Add butter, coconut sugar and maple syrup to a stand mixer and beat on high for about 2 minutes until smooth.
Add in egg, molasses and vanilla extract and mix for another minute.
Switch to low speed and slowly add in dry mix until fully incorporated.
Place cookie dough back in your bowl, cover and place in the fridge to cool for at least 1 hour.
After an hour, remove cookie dough from fridge.
Preheat oven to 350 and line a baking tray with silicone baking mat or parchment paper.
Measure 1 tbsp of cookie dough and roll into a balls (optional: roll through some sugar, or top with sprinkles)
Place balls on baking tray a few inches apart and bake for 10-12 minutes.
Remove cookies and let rest on the tray for a few minutes before letting them cool fully on a rack.
