Rhubarb BBQ Sauce

1 cup rhubarb (chopped)

1/2 cup water

1/3 cup honey
-
2 garlic cloves, minced
-
1/2 medium onion
-
1/3 cup apple cider vinegar
-
2 tbsp. chili powder
-
Salt and pepper to taste

Dash of cayenne pepper (optional)

1 tsp. of avocado oil (for cooking)

In a medium size pot, add avocado oil and turn on medium heat

Chop onions and add to pot, sauté until translucent
-
While onions are cooking, mince garlic and chop rhubarb into 1/4 inch pieces
-
Add garlic and rhubarb to pot, sauté until rhubarb becomes soft

Add chili powder, salt, pepper and cayenne, and stir until everything is coated
-
Add apple cider vinegar, honey and water
-
Turn down heat to med-low and let simmer for 20 minutes or until becomes a thicker consistency

Let cool for 5 minutes and all ingredients to a blender and blend until smooth.

Slather on some meat and enjoy!
Note: Goes great on chicken and pork.
