The World’s Easiest Vegan Pea Soup

This might just be the simplest, cheapest and tastiest soup I have ever made in my crockpot. I mean, who doesn’t love pea soup? Plus, you don’t even need some chunk of meat to make this taste delish! Just a few simple ingredients and a crockpot and you’re on your way to some seriously satisfying comfort food!

Ingredients:

 

  • 1 x 750g bag yellow split peas

  • 4 large carrots

  • 1 large onion

  • 3 -4 cloves garlic

  • 1.5 vegetable bouillon cubes

  • 2-3 bay leaves

  • 10-11 cups hot water

  • black pepper to taste

Instructions:

 

  1. Rinse and rain your peas. Pick out any weird ones or stones and add to your large crockpot. Peel and chop carrots into rough chunks – about an inch or so and add them next.

  2. Dice your onion and mince your garlic and add to the crock. Break up your bouillon cubes and toss them in.

  3. Add your bay leaves and black pepper. And then add your hot water. No need to mix everything together. Just leave it be.

  4. Then cook on high for 4-5 hours or low for 7-8 hours until everything is good and cooked.

  5. Make sure to give a stir every once in a while to make sure it’s not sticking in the corners.

And that’s it! Just toss your stuff into the crockpot and you’re set.  Serve with some crusty bread and fresh pepper.

P.S. If you’re really missing that ham, try stirring in some diced vegan ham or sausage for the last hour or two of cooking. Or add some liquid smoke or smoked paprika for a little extra flavour!
